Spicy Thai Chicken

 Assalamu alaikum wa rahmatullahi wa barakatuhu!

If you are having chicken and want it to be a little different, then this is the recipe for you. It uses lighter ingredients than the usual spicy chicken that I am used to, and therefore shows that the simplest of ingredients can create such tasty food.



 A Simple List of Ingredients:

1. Garlic
2. Green Chillies
3. Salt and Pepper
4. Sugar
5. Fish Sauce
6. Chilli Sauce
7. Chicken Thighs

Bismillah, let's start!


 Take 4 peeled garlic cloves.



 Crush the garlic and place into a mixing bowl.



Next, take 3 green chillies



Slice the green chillies and add to the garlic.



 Season with salt and pepper, to taste.



 Add 1 teaspoon of sugar.



 And, 1 tablespoon of fish sauce.



 And finally, 2 tablespoons of chilli sauce.



 Stir everything together to combine.



Take 4 chicken thighs, and mix into the marinade. Leave the chicken overnight in the fridge.



 Take a large pan, and a few tablespoons of oil. When heated, add the chicken thighs and brown on both sides. Then cover, for 45 minutes, or until cooked.



 Serve while still hot!

Ingredients

·     Salt and Black Pepper, to taste
·     1 teaspoon Sugar
·     1 tablespoon Fish Sauce

Method

1.   Stir everything except the chicken and oil together to combine.

2.   Add the chicken and coat it well.

3.   Heat the oil in a pan, and add the chicken and brown on both sides.

4.   Cover the pan and cook the chicken for 45 minutes or until cooked through.

5.   Serve immediately with stir fried noodles or rice.

My Mums Roast Chicken

 Assalamu alaikum wa rahmatullahi wa barakatuhu!

My mum has many recipes for roast chicken, but this is one of her most simple and one of my favourites. Just marinade the chicken and leave overnight, and then roast and let the oven do the work, and you'll have amazing chicken.



A Simple List of Ingredients:

1. Yoghurt

2. Lemon Juice
3. Sunflower Oil
4. Tandoori Masala
5. Salt
6. Red Chilli Powder
7. Dried Fenugreek Leaves (Dried Methi)
8. Curry Powder
9. Chicken

Bismillah, let's start!



In a large bowl, place 3 tablespoons of natural yoghurt.




Add 2 tablespoons of sunflower oil.




And, two tablespoons of lemon juice.




Next, add 3 tablespoons of tandoori masala.




And, 1 tablespoon of salt.



And, 1 tablespoon of crushed red chillies.



And, 1 tablespoon of dried fenugreek leaves (dried methi).



And, 2 tablespoons of curry powder.



 Stir well to combine, and you have your marinade.



 Take 6 pieces of chicken, and mix well to coat. You can use any kind of chicken.
Marinade for a few hours, or for best results, overnight.



 Place in an ovenproof tray and cover with foil.



  Bake in a preheated oven at Gas Mark 6 for 1 hour. Then, uncover and drain out the juices. (Keep the juices because they make an excellent gravy or dipping sauce). Place back in the oven for a further 10 minutes.




Serve whilst hot and with my real mashed potatoes!

6.   Serve with mashed potatoes and gravy.

Chilli Chips

Assalamu alaikum wa rahmatullahi wa barakatuhu!

If you're in the mood for chips with a twist, then this is a recipe for a you. Simple to put together, and made even simpler if you use frozen chips. But, for an extra special treat, take the time out and cut your own homemade chips - you won't regret it.



A Simple List of Ingredients:


1. Potatoes

2. Cornflour
3. Vegetable Oil
4. Onion
5. Garlic
6. Ginger
7. Green Chilli
8. Malt Vinegar
9. Dark Soy Sauce
10. Hot Chilli Sauce
11. Tomato Ketchup
12. Sugar
13. Salt
14. Red Chilli Powder
15. Fresh Green Coriander

Bismillah, let us begin!



 To start, take 4 potatoes.



 Peel and cut into chips.



 Add two tablespoons of cornflour.



Stir to coat all the chips in the cornflour.



 Fry the chips in a pan of oil until golden brown.



Once cooked, drain on paper towels.



For the sauce, take one sliced onion



 And 2 teaspoons of crushed ginger.



 And, 2 teaspoons of crushed garlic.



And, 2 sliced green chillies.



 In a pan, heat a little oil, and soften the onion, ginger, garlic and chilli.



Next, add 2 teaspoons of malt vinegar.



And, 1 tablespoon of dark soy sauce.



And, 2 tablespoons of hot chilli sauce.



And, two tablespoons of tomato ketchup.



 Stir to combine, and then add 1/2 teaspoon each of sugar and salt.



To thicken the sauce, add 2 tablespoons of cornflour.




Next, toss the chips in the sauce until they are well covered.





Next, add 2 teaspoons of red chilli powder. You can add more or less, if you want. 





And finally, add two tablespoons of chopped fresh green coriander.





Serve whilst hot.

Chilli Chips


Ingredients


For the Chips
·     4 Potatoes, peeled and cut into chips
·     2 tablespoons Cornflour
·     Vegetable Oil, for deep frying


For the Sauce
·     1 Onion, peeled and sliced
·     2 teaspoons Crushed Ginger
·     2 teaspoons Crushed Garlic
·     2 Green Chillies, sliced
·     2 teaspoons Malt Vinegar
·     1 tablespoon Soy Sauce
·     2 tablespoons Hot Chilli Sauce
·     2 tablespoons Tomato Ketchup
·     ½ teaspoon Salt
·     ½ teaspoon Sugar
·     2 tablespoons Cornflour
·     2 teaspoons Red Chilli Powder
·     Handful of Fresh Coriander, chopped


Method


1.     To make the chips, toss the potatoes with the cornflour. Deep fry in hot vegetable oil until golden brown and cooked through. Drain the excess oil on kitchen paper.

2.      For the sauce, heat a little oil in a pan. Add the onion, garlic, ginger and green chilli and cook until softened.

3.      Then, add the vinegar, soy sauce, chilli sauce, tomato ketchup, salt, sugar and cornflour. Cook until the sauce thickens.

4.     Next, add the chips, red chilli powder and fresh coriander and cook for a few more minutes until heated through.


5.     Serve straight away!
