Chilli Con Carne

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Chilli Con Carne. It is a spicy stew containing lamb, peppers, tomatoes and beans. The only variation I made to the traditional recipe is that I left out the kidney beans as I am not a huge fan of them. You can add them of course, and you can also use beef instead of lamb.

A Simple List of Ingredients:

1. Olive Oil
2. Onions
3. Lamb Mince
4. Garlic
5. Bell Pepper
6. Salt and Pepper
7. Smoked Paprika
8. Ground Fennel
9. Dried Basil
10. Bay Leaves
11. Red Chilli Powder
12. Tinned Tomatoes
13. Green Jalapeno Chillies
14. Fresh Green Coriander

Bismillah, let's start!



First, thinly slice a large onion.



Heat a few tablespoons of olive oil in a large pan, and add the sliced onion.



Saute the sliced onion until it's translucent and starting to brown.



Add 1 and 1/2 pounds lamb mince.



Next, add 4 diced garlic cloves. Stir to combine, and cook the lamb until it's brown.



Next, add a diced bell pepper. I used a yellow one.



Next, take the following spices:
Salt and Pepper, to taste
3 bay leaves, crushed
1 teaspoon smoked paprika
1 teaspoon ground fennel
1 teaspoon dried basil



Add the spices to the pan.



Add a few teaspoons red chilli powder, or to taste.



Stir everything well to combine.



After 5 minutes, add a tin of plum tomatoes. If you are adding kidney beans, add them at this point.



Stir everything well and bring to the boil.



Simmer on low and cover for 1 hour. 



After 1 hour, add 2 sliced jalapeno chillies.



Finally, add a handful of chopped fresh green coriander.



Stir to combine, and allow to heat through for 1 minute.



Serve the chilli as it is, or top with grated Cheddar cheese and sour cream. You could serve this with boiled rice or warm tortillas.
