Potato Hash

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Potato Hash. I love potatoes so when I find any new way to cook them, I will try it. This dish is like a stir-fry and uses potatoes, peppers and onions. It makes a great side dish, and you could also have it at the weekend for a tasty breakfast.

A Simple List of Ingredients:

1. Potatoes
2. Onions
3. Butter
4. Olive Oil
5. Red Bell Pepper
6. Garlic
7. Fresh Parsley
8. Salt and Pepper

Bismillah, let's start!



Peel 5 potatoes



Slice them into small cubes.



In a large pan, heat 2 tablespoons olive oil, and 1 tablespoon butter.



Add the potatoes.



Stir the potatoes to make sure they are coated in oil and butter.



Cover and cook for 10 minutes.



While the potatoes cook, slice 1 red bell pepper into small cubes. 



Peel and slice 1 onion, into small cubes.



After 10 minutes, the potatoes should be cooked through.



Add the pepper and onion.



Stir to combine, and then flatten into one layer.




Let the potatoes, pepper and onion cook for about 15 minutes like this. Turn them occasionally so that they brown on all sides.




Finely slice 3 garlic cloves and a handful of fresh parsley. If you don't have parsley, you could use coriander or any other fresh herbs.




Add the garlic and parsley.




Season with salt and pepper, to taste.




Stir to combine, and cook for another minute.




Serve straight away for a delicious breakfast treat!
