Courgette, Mushroom and Spring Onion Frittata

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for a Courgette, Mushroom and Spring Onion Frittata. A frittata is an Italian egg dish which is similar to an omelette or a quiche. It's a great way to use up leftovers, and you can make it your own by adding anything you have in your fridge. I made this a few nights ago, and everyone loved it and it was really filling.

A Simple List of Ingredients:

1. Courgettes
2. Spring Onions
3. Mushrooms
4. Eggs
5. Milk
6. Salt and Pepper
7. Cheddar Cheese
8. Garlic
9. Fresh Parsley
10. Olive Oil

Bismillah, let's cook a frittata!


First, chop 1 courgette into bite-sized chunks.



Chop up about 10 mushrooms.



Chop a bunch of spring onions.



Peel and finely slice 2 garlic cloves.



Crack 5 eggs into a mixing bowl.



Add 1/2 cup milk.



Grate in as much Cheddar cheese as you want.



Whisk everything together, and season with salt and pepper.




Take a large frying pan, and heat a few tablespoons olive oil.



Add the chopped courgettes, mushrooms and spring onions. Soften for 5 minutes on medium heat.



Add the chopped garlic.



Season well with salt and pepper.



Cook for another few minutes.



Pour on the egg mixture.



Allow the egg to set for about 7 minutes.



Top with a handful chopped parsley.



Grate on more Cheddar cheese.



Place the pan under a hot grill for a few minutes until the top is golden brown, and cooked all the way through.



Garnish with more fresh parsley, and allow to cool slightly before slicing. This can be enjoyed hot or cold, and is a great alternative for lunches or picnics.
