Courgette and Feta Fritters

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Courgette and Feta Fritters. They are like little vegetable pancakes, and are really easy to make. These fritters would make a delicious start to any meal, or they could be the meal itself along with your favourite dips and a salad for a light summer dinner.

A Simple List of Ingredients:


1. Greek Feta Cheese
2. Smoked Paprika
3. Plain Flour
4. Courgettes
5. Vegetable Oil
6. Dried Mint
 7. An Egg
8. Spring Onions
9. Salt and Pepper
10. Fresh Parsley
11. Fresh Mint

Bismillah, let's begin!


Grate 2 courgettes, and place on paper towels so as to absorb any moisture.



Finely chop 1 bunch spring onions and place into a bowl.



Crumble in 250 grams Greek Feta Cheese.



Add 1 tablespoon dried mint ..



.. 2 teaspoons smoked paprika ..



.. 1 chopped small bunch fresh mint ..



.. 1 chopped small bunch fresh parsley ..



.. 5 ounces plain flour ..



Season well with salt and pepper, to taste.



Add 1 beaten egg.



Add the grated courgettes.



Begin to stir in ..



.. until well combined.



Heat a few tablespoons vegetable oil in a frying pan.



Spoon the mixture into patties into the hot oil, and flatten with the back of a spoon.



Cook for 2 minutes each side until golden brown.



Drain on paper towels.



Serve warm garnished with fresh mint leaves.
