Spiced Fruit Loaf

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for a Spiced Fruit Loaf. The fruits and spices are very simple and can be altered to your taste but make sure you use the same measurement as in the recipe. Serve the loaf sliced, with plenty of butter and hot tea!


A Simple List of Ingredients:

1. Butter
2. Dark Brown Sugar
3. Eggs
4. Self-Raising Flour
5. Dried Mixed Fruit
6. Ground Cinnamon
7. Ground Ginger
8. All Spice
9. Flaked Almonds
10. Milk


Bismillah, let's bake!

Preheat the oven to Gas Mark 4.


Line a loaf tin.



Place four ounces (113 grams) unsalted butter into a large bowl. The butter should be slightly softened.



Add 4 ounces (113 grams) dark brown sugar.



Beat well with a wooden spoon.



Crack in two eggs.



Beat in the eggs.



Add six ounces (170 grams) self-raising flour.



Next, add the spices:
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon all spice



Stir well to combine.



Add a splash of milk.



Stir until creamy and well combined.



Finally, throw in four ounces (113 grams) mixed dried fruit.



Mix until just combined.



Place the mixture into the prepared tin.



Scatter with flaked almonds
Bake at Gas Mark 4 for 15 minutes or until cooked through.



Once baked, allow to cool in the tin.



Then, place onto a wire rack to cool completely. 



Slice and serve at tea time!
