Jammy Oat Bars

Assalamu alaikum wa rahmatullahi wa barakatuhu!

In the Name of Allah, Most Gracious, Most Merciful

This recipe is for Jammy Oat Bars.

These are a really simple but tasty option if you want a quick sweet treat in the middle of the week. You can use any flavour of jam that you like to really make them your own. I used strawberry (typical!) but raspberry, apricot or marmalade would be good here too.
P.S The full written recipe will be at the end of the post :)

A Simple List of Ingredients:

1. Butter

2. Plain Flour
3. Oats
4. Brown Sugar
5. Salt
6. Vanilla Flavouring
7. An Orange
8. Jam

Bismillah, let's begin!

Preheat the oven to Gas Mark 4/350F/180C.

Grease and line a 9x9 oven dish, and set aside.

Into a bowl, put 1/4 teaspoon Salt.

Then, 226 grams (8 ounces) Oats. These are normal oats not the quick-cooking ones.

And, 283 grams (10 ounces) Plain Flour.

Mix well, and set aside.

Next, Zest of 1/2 Orange.

Into a bowl, place 226 grams (8 ounces) Softened Butter. Mine was a bit too soft but it worked out ok :)

Add 113 grams (4 ounces) Brown Sugar.

Cream together until well combined.

Then, add the 1 teaspoon Vanilla Flavouring and the Orange Zest.

Stir well.

Add the dry ingredients from before.

Stir well until it's all mixed.

Place about 3/4 of the mixture into the prepared dish.

Using your palm or the back of a spoon, flatten out the mixture.
Bake for 15 minutes until lightly golden.

While it bakes, prepare the jam.

Place 340 grams Strawberry Jam into a bowl. You could use any jam that you want.

Add the Juice of 1/2 Orange.

Stir together until you have a lovely, runny concoction.

When the oats come out of the oven ..

.. spread on the jam mixture, as evenly as you can.

Sprinkle over the rest of the oats.

Bake again for 20 minutes until golden brown and bubbling. Allow to cool completely before slicing.

Once cooled, slice and serve!
