Fudgy Toffee Banana Squares

Assalamu alaikum wa rahmatullahi wa barakatuhu!

What do you get when you combine a Sticky Toffee Pudding with Banana Bread? These Fudgy Toffee Banana Squares, of course.

They are decadent and fudgy, gooey and soft. Oh did I mention how easy they are to make? Well, they are! Topped with a delicious toffee glaze, they will make anyones day :)
These are another hybrid pudding (combining two well-known desserts together) like the time when I combined doughnuts with muffins :)


A Simple List of Ingredients:

1. Boiling Water

2. Dates
3. Bicarbonate of Soda
4. Sugar
5. Butter
6. Banana
7. Vanilla Flavouring
8. Egg
9. Self-Raising Flour
10. Light Brown Sugar
11. Milk

Bismillah, let's begin!


First, get your oven heated to 180C or 350F or Gas Mark 4. Grease and line a square baking dish or cake tin.



Put the Boiling Water into a saucepan.




Along with some chopped and pitted Dates. I used Ajwa dates which I had in the freezer from this little trip that I took.



Add in Bicarbonate of Soda.




Heat it gently for 5 minutes or until the dates are soft.



Once it boils, remove from the heat.



Put the Sugar into a bowl.



Along with the Butter.



Beat them together with a wooden spoon or using the paddle attachment on your electric mixer.



Pour in a little Vanilla.



And, crack in an Egg. How amazing are eggs? There is nothing quite like them.




Take a ripe Banana, peel and mash it up with a fork.



Add in all of the date mixture and the mashed banana - which I forgot to take a picture of because I was in a bit of a rush as I was baking these and these on the same day :)



Beat everything together until it looks not very nice and you're convinced that something has gone wrong - but it hasn't, so relax!



Dump in the Self-Raising Flour.



Fold in the flour until a lovely batter is formed. I can almost smell the bananas and dates from here!



Pour the batter (or coax it out with a spatula) into your prepared square dish (or tin).
Bake in the oven for 40-45 minutes.



Now, to make the toffee sauce. To be honest, this cake tastes just fine without sauce but since it's so easy and quick, you might as well make it.
Put some Light Brown Sugar into a saucepan.



Add Butter.



And, a little Milk.




Heat the sauce gently until the sugar has dissolved. Then, simmer gently for 2 minutes, stirring all the time.



Once baked, your kitchen will smell pretty good.



Now, grab yourself a fork. And prick the sponge all over with it.



Slowly pour the sauce all over the cake.



Leave to cool. But I assure you, if you dig in with a spoon while it's still warm, you will not regret it one bit.



Can you tell we dug in? Oops.
Slice the cake into pretty little squares.









Serve them up! These are fudgy and moist. They do not go dry and are quite moreish - one square is not enough! Enjoy!

Fudgy Toffee Banana Squares


Ingredients – makes 20 square cake slices

For the Sponge
175 ml Boiling Water
175 grams (6 ounces) Dates, pitted and roughly chopped
½ teaspoon Bicarbonate of Soda
140 grams (5 ounces) Sugar
85 grams (3 ounces) Butter
1 Ripe Banana, peeled and mashed
½ teaspoon Vanilla Flavouring
1 Egg
175 grams (6 ounces) Self-Raising Flour

For the Toffee Sauce
85 grams (3 ounces) Light Brown Sugar
40 grams (1.5 ounce) Butter
2 tablespoons Milk

Method

1.   Preheat the oven to 180C/350F/Gas Mark 4. Grease and line a square baking dish.

2.  Put the boiling water into a saucepan along with the dates and bicarbonate of soda. Heat gently for 5 minutes until the dates are soft. Once it boils, remove from the heat.

3. Beat the butter and sugar together in a bowl until light and fluffy. Add the vanilla, the egg, the mashed banana and the date mixture. Mix well.

4. Put in the flour, and fold it into the mixture. Pour the batter into the prepared tin.

5. Bake for 40-45 minutes in the preheated oven until firm to the touch.

6. Make the toffee sauce. Put the butter, brown sugar and milk into a saucepan and heat gently until dissolved. Simmer gently, stirring for 2 minutes.

7.  Prick the cake all over with a fork, and pour the hot toffee sauce evenly all over. Allow to cool.

8. Remove from the tin, slice into squares and serve!
