Chinese Chicken with Spicy Noodles

Assalamu alaikum wa rahmatullahi wa barakatuhu!

It's Monday and it's raining here - again.



 In such horribly dull weather, something spicy is called for. And, this Chinese Chicken with Spicy Noodles certainly ticks all those boxes. You can serve the chicken with plain noodles (because it would be just as good) or go the whole way and spice up your noodles as well.


A Simple List of Ingredients:

1. Boneless Chicken Pieces
2. Egg White
3. Cornflour
4. White Pepper
5. Salt
6. Vegetable Oil
7. Chicken or Vegetable Stock
8. Soy Sauce
9. Hot Chilli Sauce
10. Egg Noodles
11. Spring Onions

Bismillah, let's cook!


First, marinade the Chinese chicken. Cut up Boneless Chicken Pieces into strips.


Add in an Egg White.


Sprinkle in a little Cornflour.


Season with Salt and White Pepper. Add any other seasonings that you might want like Chinese 5 spice powder etc.


Mix well and leave to marinade in the fridge for at least 20 minutes.


While the chicken marinades, make the Spicy Noodles. Take some Egg Noodles.


Boil the noodles according to packet instructions.


Drain them well.


Heat a little Vegetable Oil in a pan.


Stir fry the cooked noodles on all sides until golden brown and crispy.


Season well with Hot Chilli Sauce, Salt and Pepper.


Mix well and remove from heat. Cover and keep warm - taste for seasoning, and adjust if needed.


To cook the chicken, heat Vegetable Oil in a wok or large pan. Add the chicken.


Stir fry quickly on a high heat for 2 minutes until golden brown and sealed all over.


Remove the chicken from the wok and onto a plate.


Pour in Chicken or Vegetable Stock into the wok.


Add in Hot Chilli Sauce, Soy Sauce, Salt and Pepper. Bring to the boil. Then, add in a mixture of Cornflour and Water.


Stir well and simmer.


Add in the chicken pieces.


Stir and cover the chicken in the sauce. Bring to the boil and then cover and simmer until the chicken is fully cooked.


Once the chicken is cooked ..


.. stir in sliced Spring Onions.





Serve the chicken over the noodles, and garnish with more sliced spring onions!

Chinese Chicken with Spicy Noodles

Ingredients

For the Chinese Chicken Marinade
1 pound Boneless Chicken Pieces, cut into strips
1 Egg White
2 teaspoons Cornflour
½ teaspoon White Pepper
Salt, to taste

To Cook the Chicken
Few tablespoons of Vegetable Oil
300 ml Chicken or Vegetable Stock
1 tablespoon Soy Sauce
Hot Chilli Sauce, to taste
1 tablespoon Cornflour mixed with 1 ½ tablespoons of Water
Salt and Black Pepper, to taste

For the Spicy Noodles
225 grams Egg Noodles
Few tablespoons of Vegetable Oil
Hot Chilli Sauce, to taste
Salt and Pepper, to taste
Few Spring Onions, sliced (for garnish)

Method

First, marinade the chicken. Put the chicken into a bowl with the egg white, cornflour, salt and white pepper. Add in any other seasonings that you might want. Mix well and cover. Leave to marinade in the fridge for at least 20 minutes.

Next, boil the noodles according to packet instructions. Drain well.

Heat the vegetable oil in a pan, and stir fry the cooked noodles until crispy and golden brown. Season with the hot chilli sauce, salt and pepper. Mix well and remove from the heat. Cover to keep warm.

Now, to cook the chicken. Heat the vegetable oil in a wok or large pan until very hot. Add in the chicken and stir fry quickly for 2 minutes until the chicken is sealed and browned all over. Drain from the wok, and put onto a plate.

Put the wok onto a low heat, and add in the chicken stock, soy sauce, hot chilli sauce, salt and pepper. Stir well and bring to the boil. Add the cornflour mixture and stir in. Simmer.

Add the chicken back to the pan and coat in the sauce. Bring to the boil and simmer covered until the chicken is cooked. Once cooked, add the sliced spring onions, leaving a few for garnish.

Serve the chicken over the noodles with stir fried vegetables.
