An Apple Glut + Secret Paths + Pineapple Smoothies: 6 September- 12 September 2014

Assalamu alaikum wa rahmatullahi wa barakatuhu!

In the Name of Allah, Most Gracious, Most Merciful






Some beautiful words from Shaikh Abu Ishaq al-Huwayni: 

Don't let anyone see you, except that you are happy. Let them always see your smile and if things get difficult, the Quran is your Paradise. If loneliness starts to hurt, send your supplications through the heavens. When people ask how you are, praise Allah and smile. 

When you see an ant on the sidewalk, avoid stepping on it, seeking therein the Face of Allah; for perhaps He will have mercy on you as you had mercy on it. Remember that the ant glorifies Allah, so don't cut of it's glorifying by killing it.

 When you pass by a bird drinking from a pond, don't go so near so as to scare it, and seek therein the Face of Allah; perhaps He will spare you being terrified on the Day when the hearts will reach the throats.

 When a cat gets in your way on the road, avoid running it over, and seek therein the Face of Allah; perhaps Allah will save you from an evil end. 

When you are tempted to throw away left over food, let your intention be that some creatures (animals) will eat it (and place it somewhere they can get to it), seeking therein the Face of Allah; perhaps Allah will send you provisions through means you never imagined. 

Remember, do good no matter how insignificant it may seem to you, for you never know which good deed will be the reason for you entering Paradise. If you wish to share this, do so with a good intention, for perhaps Allah will relieve a distress of yours from the distresses of this world and the Hereafter.

 Saturday: Do you guys like Turkish Delight?

I've never really been a fan and this box full didn't convince me either. There were two flavours - a mint and a nut. 

I thought these sweet biscuits were going to be savoury. I swear that's an onion on the packet.

These sesame biscuits were pretty good though. They reminded me of these bars which would be in every sweet shop we went to as kids but no one would ever buy one!
On Saturday, I also got to finally use these ramekins that have been in my bakeware cupboard for years.
They were dusted with cocoa powder and buttered.
Filled with a smooth chocolate batter with salted caramel piped in to make these!
Sunday: Coriander seeds and tiny dried red chillies dry roasting.
I love dry-roasting spices. They give off the most amazing scent. The spices were used in the filling for this pie!
Monday: Tuna and avocado sandwich for lunch with sweetcorn, cucumber and tomato.
Casually making a little hot water crust pastry on a Monday evening.
Using it to bake a pie!

 Tuesday: I know autumn has begun when the apple glut begins. These sour cooking apples were perfect for baking.

You'll definitely want an extra slice of this one! Recipe coming soon, inshallah.

Time for lunch!
Greek salad dressing made by shaking together:
2 tablespoons Red Wine Vinegar
6 tablespoons Olive Oil
Plenty of Salt and Pepper
Pinch of Dried Oregano

Slice up cucumber, tomato and lettuce. You could also add sliced red onion, olives and feta cheese.

Serve along side a pie and make the most of any end of summer days.

A plate of fresh, sweet tiny plums for dessert!
 Wednesday: Walks during the beginning of autumn are my favourite!
 Thursday: There's nothing like finding a secret path off the beaten track.
Back home for a spot of lunch.
I made these pineapple smoothies.
Blend together frozen pineapple, tropical yoghurt, milk and honey.
And, enjoy!
I had the smoothie with my new favourite -sweet chilli rice cakes.

At dinner, I whisked together olive oil, chopped garlic and chopped coriander.
Sliced a wholemeal baguette into wedges.
Brushed them with the lovely garlic coriander oil.
Seasoned with salt and pepper, and popped in the oven to bake.
To serve with them, I made Italian meatballs in a tomato sauce.
Once the bread was crispy and golden ...
.. I grated on a tiny bit of Cheddar.
And, served up!

Friday: Whenever my mum has too much fresh coriander in the house, she always whips up this coriander chutney.
My aunt made Kari on Friday and it was so good.
Remember those meatballs from yesterday?
They taste just as good with pasta!
