Sweet + Spicy BBQ Chicken Brioche Sandwiches.

Who doesn't love a good sandwich?

It's forever been my go-to lunch when I can't be bothered with anything else.
Usually a simple cheese salad will do. Either with mayo or salad cream but always involving grated Cheddar and sliced cucumber. And, with the tomatoes on the side please.


But when I have the time, I think a sandwich involving this sweet and spicy barbecue chicken makes the best dinner. Normally, we associate sandwiches for lunch but guys, they make such a lovely change in the evening.

Let's talk about the chicken (served above over a hash) shall we? It's made with literally every sauce and condiment that was in my cupboard/fridge that day and seriously, that's the best part. You can use whatever you like and as much as you like. I went heavy on the chilli sauces because I love them. Also, when you read the recipe, you'll see that I measured everything in tablespoons. 

Why, you ask? Um, less washing up, that's why!! I can't stand washing up - it's the worst part of this whole food blogger business. So, yeah. One tablespoon is all you'll need to make the best marinade ever. Finally, once the chicken is cooked, it's chopped up and stirred into the divine sauce that said marinade will cook up, piled high onto toasted brioche buns (I just wrote bins, by accident!) and covered with melted cheese. Sandwiches for dinner guys! It's my new favourite and I hope it'll be yours too.

A Simple List of Ingredients:
1. Chicken Breasts
2. Spicy Chilli Sauce
3. Sweet Chilli Sauce
4. Spicy Yellow Mustard
5. Barbecue Sauce
6. Tomato Ketchup
7. Cider Vinegar
8. Olive Oil
9. Soy Sauce
10. Honey
11. Salt and Black Pepper
12. Vegetable Oil
13. Brioche Burger Buns
14. Cheddar Cheese

Bismillah, let's begin!

First things first. Let's marinade the chicken. I used 2 large Chicken Breasts, sliced through the middle. You could also use smaller chicken breasts, chicken thighs or even chicken wings! This marinade would be delicious on them.


We begin with the spicy sweetness.


To the chicken, in goes 3 tablespoons Spicy Chilli Sauce.


Along with 3 tablespoons Sweet Chilli Sauce.


Next, we're going to add in the BBQ essentials - BBQ sauce (a killer homemade recipe here!), ketchup and yellow mustard.


So in goes 1 tablespoon Spicy Yellow Mustard. Normal mustard is fine too.


Followed by 3 tablespoons Barbecue Sauce. I'm not a fan of eating it straight up but in a marinade, this sauce works wonders.


Last up, 3 tablespoons Tomato Ketchup.


Now that all the sauces are in, it's time for a few more things before the marinade is done!


Next in, cider vinegar and olive oil.


In goes, 2 tablespoons Cider Vinegar. Normal vinegar is fine too.


And, 2 tablespoons Olive Oil. You guessed it, any other oil will do. The oil just helps to bind our marinade together.


We're nearly there, guys. There's just time for two of my all-time favourites: honey and soy.


In goes, 2 tablespoons Soy Sauce. Dark or light is fine.


And, for a little sweet stickiness, 1 tablespoon Honey.


And, last but not least, salt and pepper!


1 teaspoon Salt


And, 1/2 teaspoon Black Pepper. Both are completely to taste. We're done!!


All that's left to do now, is give everything a good stir, cover it and leave to marinade. I left mine for an hour or two at room temperature but feel free to leave it overnight in the fridge.


When you're ready to cook, take a large, deep saucepan. Place over a medium heat and add in a few tablespoons Vegetable Oil.


Once the pan is hot, add in the chicken. I did mine in batches, two at a time.


Spoon a little of the marinade over the top.


Brown the chicken on one side for 1 minute then turn it over.


Brown the other side for 1 minute.


Before spooning on more marinade.


Bring to the boil then turn the heat right down. Cover with a lid and cook for 10 minutes.


After this time, turn the pieces over and cook again for 10 minutes or until completely done.


Once cooked ...


... remove from the heat.


Take the chicken out and let it rest for about 5-7 minutes.


Slice up the chicken.


This chicken is equally as good over a veggie hash as it is in a sandwich. Or even over a salad.


But, you guys are here for a sandwich.


So, chop up the chicken.


And, scrape out the delicious sauce from the pan.


Stir the chicken into it.


Meanwhile, slice your Brioche Burger Buns in half. Of course, normal buns or rolls would be fine too. And, if you're feeling adventurous, you can bake your own brioche at home - my recipe is here.

Also, grate up a little Cheddar Cheese.


Once the buns have been toasted, place the bottom halves back onto the grill tray.


Pile them high with the chicken.


Yum.


Finally, on goes the grated cheese.


Pop them back under the grill until the cheese has melted.


The sandwiches are great as they are but feel free to add on more sauce or salad, if you wish.


Put on their tops and it's time to eat!


Serve with crisps (my BBQ crisps recipe is here!) and coleslaw!

Sweet + Spicy BBQ Chicken Brioche Sandwiches.

Prep Time: About 2 hours.
Cook Time: About 25 minutes.
Serves: About 6 people.

Ingredients

For the Sweet + Spicy BBQ Chicken
2 large Chicken Breasts, sliced through the middle
3 tablespoons Spicy Chilli Sauce
3 tablespoons Sweet Chilli Sauce
1 tablespoon Spicy Yellow Mustard
3 tablespoons Barbecue Sauce
3 tablespoons Tomato Ketchup
2 tablespoons Cider Vinegar
2 tablespoons Olive Oil
2 tablespoons Soy Sauce
1 tablespoon Honey
1 teaspoon Salt
½ teaspoon Black Pepper
Few tablespoons Vegetable Oil, to sear

For the Brioche Sandwiches
Brioche Burger Buns, split and toasted
Cheddar Cheese, grated

Method

To marinade the sweet + spicy BBQ chicken, place all the ingredients except the vegetable oil into a large bowl. Mix well and cover with foil or clingfilm. Marinade for a few hours or overnight.

To cook the sweet + spicy BBQ chicken, heat the vegetable over a medium heat in a large, deep pan. Once hot, add in the chicken pieces along with a little marinade on top.
Sear the chicken for 1 minute then flip. Add on the rest of the marinade and bring to the boil. Cover with a lid and turn the heat right down. Cook like this for 10 minutes. Then, flip the chicken and again cook for a further 10 minutes or until it’s completely cooked through.

To make the sandwiches, remove the chicken from the heat. Let it rest at room temperature for about 5-7 minutes and then chop it up. Stir it in its sauce to coat all over.
Toast the brioche buns under the grill until golden. Pile the chicken on to one half of the bun and top with the grated cheese. Pop under the grill until the cheese has melted.


To serve, add more sauce on top of the melted cheese along with salad, if you want. Bring your sandwiches together and serve with crisps and coleslaw. Enjoy!
