Battered Fish Burgers.

Assalamu alaikum wa rahmatullahi wa barakatuhu!

My new favourite burger!

We first made them on a rainy Saturday night in May. The rain had been falling heavily all day and had completely waterlogged the lawn much to my parents dismay.


So, to cheer ourselves up on such a miserable day, we made Battered Fish Burgers. I loved them and knew that they would be perfect for Ramadan. They're a little different from the usual Iftar food and so that's why I think they're perfect for your Iftar tonight.

All you do is make a one-bowl oregano batter and a simple flour coating. Pieces of white fish are dipped into the flour and the batter before being shallow-fried in hot oil until golden and beautiful.

Burger buns are split, toasted and spread with the best tartare sauce you can get your hands on. The fish is placed on along with slices of American cheese and our burger is done. I hope this recipe inspires you to put something other than meat in your burgers tonight. Have a wonderful Iftar and may Allah accept it from us all - ameen!

A Simple List of Ingredients:
1. Plain Flour
2. Salt
3. Baking Powder
4. Dried Oregano
5. American Mustard
6. Mayonnaise
7. Water
8. Black Pepper

9. White Fish Fillets

10. Burger Buns
11. Tartare Sauce
12. Cheese Slices

Bismillah, let's begin!

We begin by whisking up a simple oregano batter.

Into our bowl, goes 250 grams Plain Flour.

1/2 teaspoon Salt

And, to make our batter light and crispy, 1/2 teaspoon Baking Powder.

Next, 1 tablespoon Dried Oregano, because this is an oregano batter. I love putting dried herbs into batters like this - so much good flavour!

I just used dried oregano but feel free to throw in others too.

Next, American mustard. I used the spicy kind but the normal is fine too.

Add in 1 tablespoon American Mustard

Next, mayonnaise. Unusual in a batter like this, but a little gives plenty of creaminess.

Add in 1 tablespoon Mayonnaise.

Everything is in ....

... except the water.

We'll start by pouring in 160 ml Water.

Whisk that in ...

... and in more water, as we need it.

Whisk the batter until it becomes thick.

It should be thick enough to cling onto the whisk.

If it's too thin, add more flour.
If it's too thick, add more water.
You cannot go wrong!

Our batter is done, so let's prepare the fish. I used 1 packet (500 grams) White Fish Fillets.

The fish was defrosted.

And then, each fillet was cut in half. This makes it easier to fit into the burger.

To fry the fish, heat 2 inches Vegetable Oil in a deep saucepan over a medium heat. We will be shallow-frying our fish.

Before dipping the fish into the batter, we're going to give it a flour coating. Take:
3 tablespoons Plain Flour
1/2 teaspoon Salt
1/2 teaspoon Black Pepper
1 teaspoon Dried Oregano

Stir them together.

When you're ready to fry and the oil is hot, dip each piece of fish in the flour mixture.

Shake off the excess flour.

Then, dip each piece into the oregano batter.

Let any excess batter drip off. This is when you will know if your batter is correct. It should be thick enough to cling to the fish - feel free to adjust it, if needed.

Add the fish pieces to the hot oil.

We fried the fish in batches.

Over a medium heat.

For 5-7 minutes or until golden brown on both sides and cooked through.

Once at this stage ...

... remove from the hot oil and drain on paper towels.
Cook the rest of the fish in batches. Any leftover batter can be used to dip onion rings into! Fry to make battered onion rings!

Guys, this is one of my new favourite fish recipes.

Tender fish encased in an oregano batter, it's so good on its own.

But not today. Today, we are using the fish to make burgers.


Beginning with 4 Burger Buns (I made the fourth later). I used brioche buns here but any will do.



Slice the buns through the middle and toast them under a hot grill until golden brown.

Next, take Tartare Sauce. This sauce goes so well with fish. I love it!

Spread each bun with tartare sauce.

If you're not a fan of tartare sauce, you can use ....

Mayo!

Ketchup! Or anything else you fancy!

Once you're happy with the sauce, it's time for the fish.

Place the fish onto the buns.

We did two per bun.

Then, American Cheese Slices!

On they go!

You can also add salad at this point too!

Before popping on the lids!

Our burgers are done! How good do they look?!

Grab some fries and your favourite drink!

Any extra fish can be put into more burgers.

Or eaten simply with more tartare sauce!

Full Written Recipe:


Battered Fish Burgers.

Prep Time: About 15 minutes.
Cook Time: About 15 minutes.
Serves: Makes 4 burgers + a few extra fish pieces.

Ingredients

For the Oregano Batter
250 grams Plain Flour
½ teaspoon Salt
½ teaspoon Baking Powder
1 tablespoon Dried Oregano
1 tablespoon American Mustard
1 tablespoon Mayonnaise
160 ml Water + more, if needed

For the Flour Coating
3 tablespoons Plain Flour
½ teaspoon Salt
½ teaspoon Black Pepper
1 teaspoon Dried Oregano

For the Fish
1 packet (500 grams) White Fish Fillets, cut into half
Vegetable Oil, to fry

For the Burgers
4 Brioche Burger Buns
Tartare Sauce, to taste
4 Cheese Slices

Method

To make the oregano batter, place all the ingredients into a bowl and whisk to make a thick batter. Add more water, as needed.

To make the flour coating, mix all the ingredients together in a flat plate.

To fry the fish, fill a deep pan with 2 inches of vegetable oil and heat over a medium heat. Dip each piece of fish in the flour coating and shake off the excess. Then, dip in the batter and let the excess drip off. Place into the hot oil and shallow-fry, in batches, over a medium heat until golden brown on both sides. This should take 5-7 minutes per batch.
Place the fish onto paper towels to let the excess oil drain off.

Leftover batter? Dip more fish into it for simple fried fish. Or dip onion rings into it, fry and have battered onion rings on the side.

To make the burgers, slice the buns in half and toast under a grill until golden brown. Spread each half with tartare sauce then top with a few pieces of fish. Next, place on the cheese slice and sandwich the burger together.

Enjoy! Eat with your favourite cold drink and fries.
