Churros French Toast with Chocolate Drizzle.

Basically how to eat churros for breakfast without any of the hassle.
You know churros, right? Those deep-fried golden pastries that are tossed in cinnamon sugar and then dunked into chocolate sauce?


They're literally my current favourite dessert. I am working on a full blog recipe for them but for now this is the breakfast version which lets you enjoy them without any of the hassle that comes with deep-frying.


For me, the best thing about churros is the texture of the pastry. How it's slightly crispy on the outside and fluffier in the middle. And then, there's the cinnamon sugar coating. You guys, I could probably coat everything in cinnamon sugar at this time of year. Two reasons - first, it's getting colder so that means only the warmest spices will do and second, the sugar coating makes everything feel like a doughnut. Which is never a bad thing on a cold autumn morning.
Finally, the chocolate drizzle. Yep, I am encouraging you to eat what is basically a loose chocolate ganache at breakfast. In my defence, it is probably the most delicious thing you will eat all day. The traditional hot churros are dunked in a warm chocolate sauce and enjoyed straight away. My breakfast version will have you make the simplest vanilla French toast, sprinkle and toss it liberally in cinnamon sugar and finish with a chocolate drizzle. It is heaven on a plate and will be the best start to your day.

A Simple List of Ingredients:

For the Cinnamon Sugar:
1. Caster Sugar
2. Soft Light Brown Sugar
3. Ground Cinnamon

For the Chocolate Drizzle:
1. Double Cream
2. Milk or Dark Chocolate
3. Salt

For the Vanilla French Toast:
1. Milk
2. Caster Sugar
3. Vanilla Essence
4. Eggs
5. Bread
6. Butter

Bismillah, let's begin!

We start with the easiest thing in this whole recipe - the cinnamon sugar. It's what will take our vanilla French toast to churros French toast.

So, grab a bowl.

Add 50 grams (1/4 cup) Caster Sugar.

Next, brown sugar. I love using a combination of both caster and brown sugar. The brown gives it a caramel flavour - so good!

Add in 2 tablespoons Soft Light Brown Sugar.

And finally, throw in the most important ingredient.

1 teaspoon Ground Cinnamon

Stir everything up and our cinnamon sugar is done! Set aside until later.

Next, the chocolate drizzle. I like to make this before the French toast so that it's ready to go! Grab a heatproof bowl - anything that is safe enough for the microwave.

Pour in 120 ml (1/2 cup) Double Cream. In the past, I have also tried this drizzle with half milk and half double cream. It will be slightly looser but just as delicious.

Next, the chocolate. I like to use equal parts milk and dark but you can use one or the other.

Add in 115 grams (4 ounces) Chocolate, broken into pieces.

Along with a Pinch of Salt.

Place the bowl into a microwave and heat for 30 seconds.

After 30 seconds, give it a stir. It may not look like much but keep stirring.

Until you're left with a glossy chocolate sauce. My microwave is pretty powerful so 30 seconds was enough for me but if you feel yours could use longer, throw it in for another 30.

Once you're happy with your sauce, set it aside until needed. You can reheat it later, if you prefer.

Next, to make the vanilla French toast. Take a deep, shallow dish that is large enough to fit your slice of bread.


Pour in 130 ml (1/2 cup) Milk.


I used semi-skimmed but any will do.


Sprinkle in 1 tablespoon Caster Sugar.


And, 1 teaspoon Vanilla Essence.


Next, the eggs!


Throw in 2 large Eggs.


So easy! Now, all you do is grab a whisk.


And, whisk everything together.


Now, that our egg coating is ready ...


... let's place a frying pan over a medium heat and add in a Knob of Butter.


Take 6 slices of Bread. The photo shows four but I ended up using six. You can use brioche but I used everyday sandwich bread.


To make a slice of churros French toast, place a slice of bread into the egg mixture.

Let it sit for a few seconds ...


... then flip it, another few seconds in the egg mixture ...


... and place it straight into the hot pan. You don't want your bread sitting too long in the egg mixture because it can get quite soggy. However, if you're using stale bread, let it sit longer.


Cook the toast for a few minutes, flipping occasionally ...


... until golden brown on both sides.


Once it is cooked, remove from the pan.


Place the cinnamon sugar we made earlier on to a flat plate.


And, dunk the French toast straight in.


Dunk and sprinkle the sugar liberally on both sides of the toast. The sugar may clump up because of the heat of the toast but give it a stir and it'll be fine.


Continue making the rest of the French toast and then eat!


It's breakfast time!


The French toast is delicious on it's own but to really give it a churros flavour ...


... give it a good drizzle with the chocolate sauce. So good!

Full Written Recipe:


Churros French Toast with Chocolate Drizzle.

Prep Time: About 20 minutes.
Cook Time: About 10 minutes.
Serves: Makes approximately 6 slices.

Ingredients

For the Cinnamon Sugar
50 grams (1/4 cup) Caster Sugar
2 tablespoons Soft Light Brown Sugar
1 teaspoon Ground Cinnamon

For the Chocolate Drizzle
120 ml (1/2 cup) Double Cream
115 grams (4 ounces) Milk or Dark Chocolate
Pinch of Salt

For the Vanilla French Toast
130 ml (1/2 cup) Milk
1 tablespoon Caster Sugar
1 teaspoon Vanilla Essence
2 large Eggs
6 slices Bread
Butter, to cook

Method

To make the cinnamon sugar, mix everything together and place on to a flat plate until ready to use.

To make the chocolate drizzle, place everything into a heatproof bowl. Microwave for 30 seconds at a time, stirring after each time, until everything is melted. Pour into a jug ready to drizzle over the French toast.

To make the vanilla French toast, in a large, shallow dish, whisk together the milk, sugar, vanilla and eggs.
Heat a frying pan over a medium heat and add a little butter. Once it has melted, dip a piece of bread into the egg mixture making sure both sides are coated. Place the bread straight into the hot butter and cook until golden brown, flipping twice. Continue making the rest of the French toast.

To make churros French toast, as soon as the bread comes out of the frying pan, coat each piece in the cinnamon sugar. You can put on as much as you like – we like a heavy coating of cinnamon sugar.

To serve, drizzle the churros French toast with the chocolate drizzle and enjoy immediately.
