Lemon and Blueberry Cupcakes

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Lemon and Blueberry Cupcakes. They are lemon flavoured cupcakes with blueberries running through them, topped with a cream cheese icing flavoured with more lemon, garnished with a fresh blueberry and dusted with icing sugar. These cupcakes are a little taste of summer and will brighten up any dull day!

A Simple List of Ingredients:

1. Margarine 
2. Caster Sugar
3. Eggs
4. Vanilla Flavouring
5. Lemon Zest
6. Lemon Juice
7. Blueberries
8. Self-Raising Flour
9. Milk
10. Cream Cheese
11. Icing Sugar
12. Butter

Bismillah, let's begin!

Preheat the oven to Gas Mark 4.



Into a large bowl, place 4 ounces softened margarine




Add 4 ounces caster sugar.




Whisk together until light and fluffy.




Add 2 eggs.




Whisk in the eggs, and add 1 teaspoon vanilla flavouring




Whisk to combine.




Zest 1 lemon.




Add the zest to the bowl.




Whisk to combine.




Juice the lemon.




Add the lemon juice to the bowl.




Take 3 ounces blueberries, and 6 ounces self-raising flour.




Take a few spoons of the flour and add to the blueberries.




Toss the blueberries in the flour. This helps the blueberries stay consistent through the batter and not sink to the bottom.




Add the remaining flour in stages.




Whisk to combine.




Add the rest of the flour with a splash of milk




Whisk until just combined.




Add the blueberries and the remaining flour. 




Carefully fold in the blueberries.




Line a cupcake tin with cases. I use an ice cream scoop to fill the cases. This ensures that the cupcakes are all the same size.




Fill the cases with batter.




Bake the cupcakes in the preheated oven at Gas Mark 4 for 20 minutes.




Cool the cupcakes on a wire rack whilst making the icing.




Place 2 tablespoons softened butter.




Add 2 tablespoons softened cream cheese.




Mix the butter and cream cheese together.




Add 1 teaspoon vanilla flavouring




Add 1 teaspoon lemon zest




Add 1 and 1/2 teaspoon lemon juice.




Mix everything together.




Add 6 ounces icing sugar.




Mix to combine.




Place a little icing on each cupcake, top with a blueberry and dust with icing sugar.
